History. Paul Carlson, (27 years old / Owner) and Diego Cerezo (27 years old / General Manager) were childhood friends and neighbors that met 15 years ago. Paul moved to Virginia in 1996 and both friends virtually never heard of each other in 10 years. Thanks to the Internet, in 2006 Diego (living in San Diego at the time) was able to contact Paul (living in Virginia). Coincidentally Paul was moving to New York City for a job and needed a roommate; Diego agreed to go and both met for the first time in 10 years at Dulles International Airport and headed to the “Big Apple”.

As roommates in NYC, they started having regular conversations on starting a business and their journey to becoming entrepreneurs began. Initially, they would literally sit down at a bar and write ideas on a paper napkin (cliché but true!). Those ideas later transformed into a business plan, which consequently influenced the decision of quitting their NYC jobs and move to beautiful Washington, D.C., and begin work on VINOTECA.

About. After various considerations on what the name of the restaurant should be; vinoteca [venotecha], noun: meaning a wine bar, was coined. Vinoteca’s concept (influenced greatly by many wine and cheese bistros in NYC) is to be a unique neighborhood and destination eatery, where patrons may enjoy a specialty product (lots of wines by the glass, cheeses, charcuterie, and more), knowledgeable staff, excellent service, and an appealing atmosphere. Also, part of Vinoteca’s concept is to “keep it real” and do all design, renovations, interior decorations, marketing, menu, etc., on their own with help only from friends and family.

Coming Soon. Vinoteca is expected to open to the public in the fall of 2007. The 3,998 sq ft establishment on 11th and U streets has undergone renovations and has contributed in the development and appearance of the Mid City neighborhood. Philip C. Spalding from the ANC1 (Advisory Neighborhood Commission, D.C.) said, “a big thank you to Vinoteca from the community, this should be an inspiration to others”.
